Your Everyday Salad: They don’t have to be boring, really

I was never a salad person myself, perhaps up to a certain stage of life if you placed a plate filled with salad in front of me I’d make an irrational joke assuming that you’re not being serious. But times change and people change (prove me otherwise), and as the 21st of June is approaching I probably won’t be arsed to cook in the scorching sun that we get in the South West of Ireland.

For this fine purposes I had an epiphany, it’s time to revolutionalise my life with a bit of green stuff, as the temperatures begin to rise, same goes for the humidity with every miserable Londoner standing in the underground praying for a cold one. It’s a season filled with misery for many, but not for those who like to munch on their veggies and try not to stuff their mouths with fish and chips every day.

Salads don’t have to be boring, and my everyday salad is whatever the hell I can find in the fridge at the time, chop the shit out of it, get a peeler, and just peel the cucumber, off it goes to your bowl, take out your salad spinner if you have one, stick your iceberg lettuce or whatever lettuce you can find and make sure to get rid of all the moisture after washing it, this way you will avoid a disappointing experience of your salad’s sauce going to the bottom of your bowl making your salad bland and boring. Alternative you can stick those leaves inside a tea towel and shake it like a maniac.

Sauce for this salad is simple, get a small glass and do 1/3 of lemon juice, 1/3 of olive oil and 1/3 of mustard, mix everything and I guarantee you, this stuff will rock your socks in a good way.

  • 1 Cucumber
  • 1 Iceberg Lettuce
  • 50 g Walnuts
  • 150 g tomatoes
  • 120 g goat’s cheese
  • Bunch Coriander
  • 60 g Pomegranate seeds


  • 1 Lemon
  • 80 ml Olive Oil
  • 80 ml Mustard of your choice
